Photos yes, Videos no. Both Nikon Z6 and Z7 have an internal buffer that can hold photos even if no memeory card is inserted.

Pressing the shutter will focus and then take a picture (single and multi-shoot). Switching to playback, the images are tagged as “Demo”:
Images can be browsed and enlarged but that’s about it: They can’t be accessed after connecting the camera to a PC and are lost once the camera goes into stand-by or is switched off. The buffer has a limited capacity: The Z6 can take up to 20 images. Once this limit is reached, new photos overwrite the previous ones.
